The other day, I wanted to go x-country skiing but did not want to pay. So, I googled the following: free, x-country, NH. My result was that I discovered a program called Winter Trails. This program offers free x-country skiing or snowshoeing throughout the country and it so happened to be on that day. I packed my stuff and headed on up to Mt. Washington. The resort provided rentals, as well as a lesson for free! I took advantage of the lesson, and I picked up a few helpful pointers as well. It was a lovely day.

It's my famous pasta salad recipe from Romania!

Famous Romanian Pasta Salad
1.Boil Pasta (I use Penne or Rotini)
Drain and run under COOL water for 10 min or so
2. I container Kalamata olives-pitted (NOT in oil-brine is best)
3. Sun Dried Tomatoes-chopped
4. Fresh Basil-chopped
5. Red onion-diced
6. Red or Green pepper-diced
7. Feta Cheese (Crumble your own. Often with prepared cheese it is rolled in flour to prevent sticking-not sure about feta, but its cheaper anyway)
8. 1/4 lb. Genoa Salami and 1/4 Provolone. I place one on the other then tight-roll the two slices. Then, I slice that into about 4-5 beautiful rolls. (If you prefer another type of meat ie pepperoni, or prosciutto thats fine as well)
*Mix all these ingredients in a bowl then toss with Olive oil, Balsamic Vinager (I use the clear white kind if available) and chopped garlic.
